Inspector's notes

Observed employee take off gloves after multiple activities including RTE foods and using a tablet and did not wash hands before putting on a new set of gloves. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Corrective Action: Corrected at time of inspection.

Observed use of same pair of gloves for handling phone, touching dividers, touching frozen TCS foods, touching tongs for hot dogs, touching pre-cooked and RTE taquitos, submerging hand and arm completely into trashcan. Gloves must only be used for a single task such as raw animal proteins or RTE foods and for no other purpose. Must be discarded in between operations. Spoke to PIC about reminding employees to change out gloves and wash hands in between. Corrective Action: Corrected at time of inspection.

Inspector's notes

Observed RTE (ready-to-eat) wraps(containing turkey and salami) on the front kiosk at 54°F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were moved to a reach-in fridge to rapidly cool. Corrective Action: Corrected at time of inspection.
