Observed in-use soda dispenser at the bar with visible syrup accumulation inside the nozzle. Educated PIC that all food-contact surfaces must be cleaned to sight and touch. PIC had employee remove the nozzles and relocated them to dish area to wash, rinse, and sanitize. Corrected at time of inspection.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed TCS food being held inside a reach-in unit with an internal temperature of 49-50*F. Internal temperature of food items registered with internal probe thermometer. Reach-in unit ambient temperature registered 50*F with min/max thermometer. Per PIC all food had been held in unit for greater than 4hrs. TCS food items included cut leafy greens, hard boiled eggs, egg salad, seafood salad, and cut tomatoes. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed PIC to not place any TCS food items in unit until unit is repaired to hold temperatures at or below 41*F. Corrected at time of inspection.
