Inspector's notes

Observed a large pool of blue liquid under the three-compartment sink. Upon further inspection, the liquid had leaked from the line connected to their sink wash aid soap. Per PIC the bag had been replaced recently and the hose may not have been properly connected. Physical facility must be cleaned frequently enough to prevent accumulation of dirt, organic matter, and food debris. Must clean physical facility prior to next routine inspection. Correct prior to next routine inspection.

Observed an in-use ice machine with black, slimy, organic-like material behind the deflector panel. PIC stated the ice machine was cleaned over the weekend, but stated they did not get behind the deflector panel. Instructed PIC in clean-in-place procedure using hot soapy water, hot water rinse, and hot water with sanitizer. Correct prior to next routine inspection.

Observed two floor drains with outflow pipes fully inside of the floor drains. Educated PIC that all outflow pipes need a 1" air gap above the floor drain to prevent sewage backflow into the pipes. PIC notified maintenance and stated the pipes would be raised as soon as possible. Correct prior to next routine inspection.
