The internal temperature of the hot dogs was 49-51*F, and they were prepared roughly an hour prior to inspection per time stamp. The ambient temperature of the walk-in cooler was 38*F. Product was unstacked and lids left ajar to facilitate rapid cooling. Corrective Action: Corrected at time of inspection.

No hot water at handwashing sink located near prep table in back of kitchen. Per person in charge, a work order has been submitted to fix the hot water knob on the faucet. There is hot water at all other sinks/faucets. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. Corrective Action: Correct prior to re-inspection within 10 business days.

Observed a chlorine dishwasher with 0ppm of chlorine concentration after final rinse. Chlorine test strips were available and easily accessible. There was evidence that machine had been used, there were dishes inside. PIC primed the machine a few times and it yielded 0ppm after final rinse. PIC advised staff to sanitize all dishes at the 3-compartment sink using quat. Quat test strips were available and the quat dispenser was dispensing proper concentration between 200-400ppm. Please ensure chlorine sanitizer is maintained at proper concentration of 50-100 ppm. Corrective Action: Corrected at time of inspection.
