Inspector's notes
In walk-in cooler, the following TCS items were observed without any date mark: shredded chicken, shredded beef, rice, beans, soup, and various cooked vegetables (potatoes, corn, carrots, zucchini). Per kitchen staff all food was prepared two days prior. Staff began to date mark all food during inspection. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). Corrective Action: Corrected at time of inspection.

PRIORITY VIOLATION-3-501.14, P: Cooling. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling. ---In walk-in cooler several filled 5-gallon plastic containers of enchilada sauce measured an internal temperature ranging from 51-59'F. Per person in charge sauce was made the prior evening, poured into containers, and placed into walk-in cooler to cool. As sauce had not cooled within 6 hour time frame it was embargoed. Reviewed cooling process with person in charge, who stated that containers were filled and then placed into cooler with no additional steps to aid in cooling. Discussed additional methods to be used, such as an ice bath or ice wands, to facilitate rapid cooling. When cooling, TCS foods shall go from 135'F to 70'F within the first two hours and down to 41'F within the remaining four hours. Correct By: Corrected At Time Of Inspection
