Inspector's notes

Observed prep table on the cookline with TCS food items 44*F-46*F including sliced cheese, cut lettuce, cut tomatoes, cooked peppers at the time of inspection. Also observed in a reach in cooler on the cookline nacho cheese 46*F and cut lettuce 47*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Per PIC, TCS food temperatures were checked two hours prior to the time of inspection and were 41*F or below. PIC added ice to the TCS food items or moved some food items to an alternative refrigeration unit to cool back to 41*F or below at the time of inspection. Corrective Action: Corrected at time of inspection.

Observed drain under the drink station with organic matter build up. Observed drainpipe loose and fallen into the basin. PIC was informed to clean the drain and to fix the drainpipe so that it is at least an inch above the basin opening to prevent back flow. PIC fixed the drainpipe. Discussed the importance of keeping the drains clean and monitoring that they work properly. Must repair all plumbing to a state of good repair prior to next routine inspection. All plumbing must be maintained in good repair at all times. Corrective Action: Correct prior to next routine inspection.
