The person in charge (PIC) stated the items were moved from the walk-in refrigerator to reach-in refrigerator approximately an hour prior to the inspection. At the time of inspection, the items were placed back in the walk-in refrigerator to rapidly cool. Ensure TCS items are maintained at 41°F or less when cold holding.
