Inspector's notes
Observed a gap in shellstock tag records between October to January. Shellstock tags were retained by establishment during this time, however the shellstock tags were not marked with the initial and final sale dates. Spoke with person in charge regarding the importance of shellstock tag retention and ensuring that proper training and verification was performed for shellstock record upkeep. Shellstock tags must be kept with shellstock until sold, dated with final sale date, and maintained in chronological order for 90 days onsite. Had employee mark the current shellstock tags with correct dates. Corrective Action: Corrected at time of inspection.
