According to the establishment's label, the frozen foods are held for 9 days once taken out of the freezer. Day one starts the day that TCS foods held in refrigeration at 41F and can be held for a total of 7 days at 41F. For example, corn dogs removed from the freezer on 8/8 should be discarded by 8/14. The establishment's labels show a discard date of 8/16, 2 days longer than the Food Code requirement. Please update the information in the label maker to be in compliance with the FDA Food Code date marking requirements.

Observed no paper towels in the women's toilet room. PIC provided paper towels. Hand washing sinks must always be stocked with hot water, soap and paper towels. Facilities must be maintained in a condition that promotes handwashing. Wet hands transfer bacteria more readily than dry hands. Corrective Action: Corrected at time of inspection.

Inspector's notes
Observed a metal pan of unpackaged raw ground beef smash patties stored on the wire rack of the cook-line reach-in refrigerator, above unpackaged containers of hot dogs. The raw beef patties were placed on the bottom shelf, below all ready-to-eat food. All raw animal proteins must be stored below ready-to-eat (RTE) foods and stored according to cooking temperature at all times to prevent cross contamination. PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code. Corrective Action: Corrected at time of inspection.

Observed pooling water and an accumulation of soil under the dry storage racks and soda bib area. According to PIC, the water may come from the ice machine across from the racks. Discussed cleaning the area more frequently to prevent soil accumulations. PHYSICAL FACILITIES shall be cleaned as often as necessary to keep them clean to prevent pest activity and pathogen growth. Corrective Action: Correct prior to next routine inspection.
