#21 — Proper Hot Holding TemperaturesPriority3-501.16

Inspector's notes

Observed cooked chicken, al pastor, and carnitas hot held with internal temperatures ranging from 115-125°F located in back kitchen prep area. Person in charge (PIC) stated items had been in hot wells for approximately 15 mins and noticed that hot holding equipment was turned off during inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.
