PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. ====Observed by drive thru station ambient temperature of small dairy beverage air unit at 47*F-49*F with min/max. Inside internal temperature of large milk bag at 48*F; 12 canisters of whip cream at 48*F. Notified Person In Charge (PIC). Per PIC morning check had the unit at 40*F ambient. PIC had employees move all products to walk in unit to cool to 41*F. Per PIC the unit was restocked at 10:30am. Time of inspection is after 12:30pm. ============Except during preparation, cooking, cooling, or when time is used as a control all TCS food to be maintained at 41°F or less.
