Observed raw chicken, sliced tomatoes, and tomato sauce in prep table cooler at 44-53 °F. Observed minimum ambient air temperature of 35 °F in cooler as measured with min/max holding thermometer. Foods had been moved from walk-in cooler less than one hour prior as per person in charge. Except during preparation, cooking, cooling or when time is used as a control all time/temperature control for safety (TCS) foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Person in charge moved all TCS foods to walk-in to rapidly cool at time of inspection. Discussed cooling methods and monitoring temperatures with person in charge. Corrective Action: Corrected at time of inspection.
