at the time of inspection, no use by date for the pans of rte/ceviche and the imitation crab meats. also noted stickers indicating 6-10 for the pans of cooked shrimp assorted count. discussed with manager on duty. manager will coach the meat staff on proper use by date policy and proper date marking for the rte-cooked seafood prepared and served from the meat market. facility has a new sticker wall according to each itemized seafood. manager provided training to meat staff. new use by date labels prepared. Corrective Action: Corrected at time of inspection.

some ceiling damage (hole in paneling material) observed directly above the walk-in door. manager will place a work order. please ensure the ceiling panels are finished to smooth, easily cleanable. Corrective Action: Correct prior to next routine inspection.
