Observed cheese (50°F), sliced tomatoes (49°), opened dairy-based dressings (50°F), in the prep table cold holding above 41°F. The prep table measured 50.0 on the min/max thermometer. Staff stated the food had been in the prep table overnight (see embargo). Discussed the importance of keeping cold-holding foods below 41°F. Staff will place replacement TCS items in the nearby walk-in until the prep line cooling unit can maintain temperatures below 41°F. Discussed cold holding requirements. Corrective Action: Corrected at time of inspection.
