Advised staff to cool foods to 41*F prior to placing plastic wrap and lid on container. Chicken wings were discarded. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding. ---In walk-in cooler the following TCS items measured an internal temperature of 50-53'F: shredded and sliced cheese, nacho cheese, chili, bacon, raw ground beef, raw chicken, mayo, and bleu cheese dressing. Per cook cooler had been verified to be holding temperature at beginning of day approximately 1.5 hours prior. Initial air temperature of cooler measured around 56'F. Cook adjusted thermostat of cooler. By end of inspection ambient air temperature measured 42.2'F with min/max thermometer and internal temperature of food had slowly begun to lower. Cook will continue to monitor temperature of food to ensure that it reaches proper cold holding temperature. TCS foods shall be held at 41'F or lower when cold holding. Cook confirmed dates for food to be accurate. As all items had been held past 7 days they were voluntarily discarded.
