Inspector's notes

Observed two 5 gallon buckets of Green enchilada sauce still in active cooling process in the walk-in cooler from 5/5. One bucket had an internal temperature at center if the product at 48*f degrees and other bucket at 55*F. Establishment uses ice wands to cool product as an SOP. Discussed longer duration of ice wand usage to ensure product reaches 41*f degrees in the 6 hour time frame. Reviewed cooling procedures with manager. Items discarded. Corrective Action: Corrected at time of inspection.
