Observed cut tomatoes, chopped lettuce, and green leaf lettuce ranging from 50*F to 54*F with a prepared time of 4:59am and discard time of 8:59am, time of inspection was approximately 9:45am. The listed food items are being held under a 4 hour time as control per the establishment's "time as a control" policy. Discussed proper “time as a control” procedures with the PIC. PIC voluntarily discarded food items, see embargo. Corrective Action: Corrected at time of inspection.

Priority Foundation-3-501.19 (A1, B2, C2-3), Pf: Time as a Public Health Control; Documentation. ======Observed at time of inspection all food sticker times for both sandwich areas were from previous day 10/30 at 3pm. Today is 10/31 at 12:40pm. Notified Person In Charge(PIC) to change sticker times to appropriate times. Per PIC all foods recently replaced. Discussed with PIC that procedure for time as control is for 4 hours for cut tomatoes; cut lettuce; and variety of cheeses. Need to comply with sticker protocol for food safety. ======The food has to be marked or otherwise identified to indicate the time that is 4 hours past the point the TCS food was removed from temperature control.
