Inspector's notes

Line make table is holding time/temperature control foods such as cheese, pico, sauces at 48 degrees F. As per cook and person in charge product is removed at the end of the night to walk in cooler and unit shut off. As per cook/PIC unit was turned on this morning and product placed in unit at 10-11 am. PIC corrected by moving half the product back to the walk in and providing ice for the remaining product. Cook had placed a 5-gallon bucket of ice to assist the cooler before I arrived on site. Instructed person in charge to not use unit until unit maintained so as to hold at 41 degrees or less. Reviewed proper cold holding and how to check thermometer calibration using ice water at 32 degrees F.
