No County legal action will result from this inspection.Observed cold brew at room temperature in the back kitchen measuring 77*F with a probe thermometer and timestamps from 4/7 12p to 4/8 8a. Advised PIC cold brew is a TCS foods and must be brewed under refrigeration and dated for 7 days or less and held at 41*F or below unless a variance is obtained. Provided MCESD cold brew guidance document. PIC moved the cold brew to the cooler at the time of inspection.
Inspector's notes
Observed a cold brew container stored in the back hand sink basin to dry. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. PIC relocated all items blocking handwash sink at time of inspection. Corrective Action: Corrected at time of inspection.

Establishment is using quat and chlorine sanitizers but only has water damaged chlorine test strips that are ineffective at verifying sanitizer concentration. Test strips are required for any sanitizers used with food contact surfaces. Provide sanitizer test strips for each sanitizer used prior to re-inspection on 4/17/2026. Corrective Action: Correct prior to re-inspection.

Discussed with PIC cold brewed coffee is regarded as a time/temperature control for safety (TCS) and requires a HACCP Plan and variance to brew at room temperature. HACCP Plans and variances are NOT required if cold brew is brewed, held, and dispensed at 41F and below and date marked for no more than 7 days from date of production.
