Inspector's notes
Observed employee wipe forehead with paper towels and proceed to remove hotdogs from packaging without washing hands in between. Discussed the importance of proper hand washing and when hand washing is required with the person-in-charge (PIC). Hands must be washed at any time contamination occurs and when changing tasks. Employee briefly washed hands at handsink for 5 seconds. Instructed employee to wash hands and scrub with soap for the full 20 seconds. Employee properly washed hands at handwash sink at time of inspection. Discussed the importance of proper hand washing procedures with the person-in-charge (PIC). Proper handwashing procedure is to rinse hands with warm water, scrub with soap for 10-15 seconds, rinse with warm water, dry with approved drying provision, and turn off in a manner to prevent re-contamination of hands. Entire process should take approximately 20 seconds for full and proper handwashing to prevent spread of pathogens and contamination. Corrective Action: Corrected at time of inspection.

Observed following time/temperature controlled for safety (TCS) ready to eat (RTE) foods labelled with an open date of 6/24 and discard date of 6/30: chicken sandwiches and egg and sausage sandwiches. RTE/TCS foods requiring date marking must be date marked within 24 hours and sold or discarded after 7 days (including the day it was made as day 1). All RTE/TCS foods past 7 days of preparation were discarded by PIC at the time of inspection. Corrective Action: Corrected at time of inspection.

PIC informed that hotdogs are a ready to eat time/temperature controlled for safety food and must be sold or discarded within 7 days of opening when thawed. The boxes were labelled 1/9 - 1/15. PIC indicated they would discuss this with their general manager.

Observed pizza pans, plastic food containers, and cutting board in quaternary ammonia with measured concentration of <150 ppm. Food-contact surfaces sanitized using quaternary ammonia must be sanitized with a contact time according to manufacturer's specifications. Person in charge drained the compartment and indicated they would rewash, rinse, and sanitize these food contact surfaces. Corrective Action: Corrected at time of inspection.

Upon inspection, a remodel has taken place which may require an application and plans to be submitted, and/or additional permits. Please submit an application, supporting documentation, and fees within 5 business days.>>>Observed new self cleaning ovens with installed RPZ backflow device; person in charge indicated they were new but they have not started using them yet. Observed soda machine, ICEE machine moved from original location; person in charge did not know if they replaced, changed, or removed the backflow device for the soda machine; soda machine was in use at time of inspection. Observed new water heater; person in charge was unable to answer if it was a like-for-like unit or if they installed a new larger one; water heater was in use at time of inspection. Also observed a wall removed; person in charge confirmed that during their remodel they removed a wall. Also observed 2 new hot holding units and 4 new cold holding units; person in charge indicated they are changing their menu but they do not know what the new foods will be and they are not serving or they were storing them at time of inspection.This establishment is not participating in the award program at this time and had 0 Priority, 0 Priority Foundation violations on this inspection.Of note: ready to eat time/temperature controlled for safety foods (such as half and half creamer, hot dogs, cold brew coffee) must be discarded or sold within 7 days of opening the packages. The establishment is currently date marking some of these foods (cold brew, half and half) with a 14 day shelf life; all of these foods observed at time of inspection had been open for less than 7 days.
