Observed facility is cooling large containers of food on the counter. Beef is 80F, fajita cooked mixed is 80F. Facility moved product to thin containers and put in the fridge instead of the counter. Sent manager handouts about cooling methods/techniques and time limits. Ensure that cooling food is done correctly to get below 70F within 2 hours, and below 41F within 6 hours total. Repeat violation.

Facility has added new drywall and electrical outlets in the back dry storage area. Facility has an ice machine and that ice is used for food in soda fountain machine, Facility doesn't have a hand sink for the ice machine room, please filll out a minor remodel permit to start that work.
