Observed employee drop item on the ground, threw away the item, took off soiled gloves and put on new gloves. Talked to manager about handwashing, and had employee immediately wash their hands. Raw shell eggs on cook line observed at 60F since 8am. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. PIC put eggs in upright to cool. Chopped chicken fried steak and tomato based salsa in make tables at 49 to 53F since 8am; melted butter on prep table at 80F since 6am. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below.Chicken fried steak and salsa were placed in upright.
