Observed establishment amidst a remodel and discussed with person in charge about covering equipment & cleaning equipment prior to food service. Observed active construction with very little shielding from construction to front of house kitchen area at time of inspection. Observed walls, floors, and ceilings covered in construction debris in the front service area at time of inspection. Observed establishment amidst a remodel and discussed with person in charge about cleaning requirements prior to food service. Discussed with person in charge about cleaning procedures when construction is happening. Employees deep cleaned the front service area at time of inspection. Employees put up temporary walls & shielding at time of inspection. Ensure partitioning of active construction from kitchen/food prep areas still operation. PRIORITY VIOLATION-3-501.16(A)(2) and (B), P: Time/Temperature Control for Safety Food, Cold Holding. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4576/AMC-Toolbox---Cold-Holding.-----Cut tomatoes-47F and shredded lettuce-51F in the reach in cooler under the sandwich prep table. PIC stated that both items had been in the unit for less than 2 hours and relocated to the walk in cooler. (*The shredded lettuce was at 47-48F after about 15 minutes in the walk in.) Keep PHF/TCS foods in cold holding at 41F or below. *Ambient temperature of the reach in cooler was fluctuating between 45-48F. PIC removed all food items from the unit and stated that the unit would not be used until it is maintaining 41F or below. Establishment has sufficient refrigeration.
