Yogurt section of open retail case is holding time temperature control foods at 46-54 F. Instructed person in charge to discard all out of temperature time temperature control foods. Reviewed proper colding and how to check thermometer calibration using ice water at 32 F. Instructed person in charge to not use unit until unit can be maintained so as to hold 41 F or less.
