Inspector's notes
Observed active warewashing in stationary dish machine where maximum water temperature reached 157*F, via min/max thermometer. After 7 runs, dish machine water temperature was between 144*F-157*F. When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Instructed person in charge (PIC) to sanitize food contact surfaces in three-compartment sink with approved concentration of quaternary ammonia sanitizer. Corrective Action: Corrected at time of inspection.

Observed unlabeled spray bottles with clear, pink or brown liquids. Per Person in Charge (PIC) the pink liquid is sanitizer for food contact surfaces and was not sure of the clear and brown chemical. PIC discarded the unknown liquid. Discussed with PIC Working containers used for storing poisonous or toxic chemicals such as cleaners and sanitizers taken from bulk supplies shall be clearly and individually identified with the common name of the material. PIC labeled the sanitizer bottle at time of inspection. Corrective Action: Corrected at time of inspection.
