Inspector's notes

A sanitizer bottle labeled "Kitchen Bleach" was observed to have a chlorine concentration greater than 200ppm using test strips. Per PIC, the sanitizer solution is used for cleaning food contact surfaces in the kitchen. Chlorine test strips were available and easily accessible. Chemical sanitizers may be toxic if not used in accordance to FDA food code requirement. Chlorine sanitizer must have a concentration of 50-100ppm. Advised PIC to make a sanitizer solution at the three compartment sink, test it, then fill-up sanitizer bottles from the new sanitizer solution. PIC cleaned the sanitizer bottle with soap and water and made a new sanitizer solution with a concentration of 50-100ppm. Please ensure chlorine sanitizer is maintained at proper concentration of 50-100 ppm. Corrective Action: Corrected at time of inspection.
