Observed mechanical dishwasher with chlorine concentration between 10 and 25 ppm. Even after priming the machine it was still low. PIC to contact company and have dishwasher serviced to dispense more chlorine during the cycle. 3 compartment sink was set up to sanitize the dishes there. Chlorine concentration in the 3 compartment sink was between 50 and 100 ppm. Test dishwasher daily to ensure chlorine concentration is between 50 and 100 ppm. Corrective Action: Corrected at time of inspection.

Discussed keeping the proteins directly in the wok to keep at 135 degrees Fahrenheit or above. Beef was reheated and set to hot hold in the wok. Corrective Action: Corrected at time of inspection.
