Inspector's notes

Observed two containers of cooked corn in the hot holding cabinet with an internal temperature of 44-88'F when measured with a probe thermometer. Per PIC the corn was pulled from the freezer and heated in the microwave 20 minutes prior to the inspection. Discussed taking temperatures of food after reheating for hot holding. PIC reheated the corn to 135'F. RTE food taken from commercially processed, hermetically sealed container, or from food processing plant shall be heated to 135°F for hot holding. Corrective Action: Corrected at time of inspection.

An on-site visit was made at this establishment on 2/12/24. Upon arrival the establishment was temporarily closed and had postings in the drive-thru and lobby. The PIC stated the establishment voluntarily closed on the night of 2/11/24. The PIC stated two drains have been unclogged, but the other two drains near the boiler tank are still clogged. The PIC stated they are in the process of doing a hydrojet method for the remaining two clogged drains and the plumbing company was already on site. No flies were observed in the establishment. The PIC stated they conducted some cleaning in the area and fixed a water leak. The PIC stated a pest control company is coming tonight to treat the drains. No legal action will result from this inspection. This advisory report was emailed to the PIC at the time of inspection.
