Observed sauerkraut, shredded cheese, and sliced ham in the 2nd cold holding unit to the right of the cook line. Per PIC, the food was placed into the walk-in at 10:30am and will be discarded at 2:30pm. Ambient air temperature taken with a min/max thermometer of the unit was 60*F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. The establishment will utilize time as a control and the walk-in cooler in the meantime. Corrective Action: Corrected at time of inspection.

In the bottoms of the two units closest to the dishwashing area, observed ham at 52*F, sausage at 53*F, diced tomatoes at 54*F, cooked chorizo at 52*F, and shredded cheese blend at 50*F. All foods were in the units less than 4 hours and were moved to the walk in cooler to rapidly cool.
