PIC properly stored all raw animal proteins according to the final cooking temperature based on the cooking parameters in § 3-401.11 of the Food Code.

Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. Establishment will utilize the kitchen dishwasher until repaired.

Inspector's notes

Observed dirty rice, uncooked turkey bacon, pork sausage, pork bacon, shredded cheese, raw shrimp, and marinated raw shrimp in the drawer cooler between 44-60'F at the time of the inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection.

Observed plumbing pipe from the bar dishwasher in the flood rim of the floor drain at the time of the inspection. The plumbing must be at least 1 inch above the flood rim for proper backflow purposes. Also, observed a y-valve split off of the dump sink at the bar to feed the dishwasher. Please provide a dedicated water source for that water line to the dish washer. Lastly, observed a chemical dispenser directly connected to the hose attached to the mop sink. Chemical dispensers must have their own dedicated water source due to backflow devices on this fixture setup. Repair and maintain plumbing issues in proper repair prior to re-inspection (Thursday June 19th).

All foods had been out of temperature for less than 4 hours and were moved to the walk in cooler to cool. In the bakery, observed a cake with cream cheese frosting being held at room temp (77*F). Cake was made and kept at room temp since the day prior. Cake was embargoed. All temperature/time controlled for safety foods in cold holding must be kept at 41*F or below.
