Observed caulking at the designated hand sink at the end of the cookline to be missing, cracked, or otherwise degraded, rendering the area neither smooth, nor easily cleanable. All floors, walls, and ceilings must be maintained and repaired such that it is smooth and easily cleanable. Repair physical facility prior to next routine inspection. Corrective Action: Correct prior to next routine inspection.

Inspector's notes
Observed 0PPM chlorine being dispensed from low-temp mechanical dish machine at time of inspection. PIC primed the sanitizer and ran the machine a total of 4 additional times with no change in sanitizer concentration on the food-contact surfaces. PIC will discontinue use of the low-temp dish machine and instead use the 3-comp sink for warewashing activities until such repairs are made. Food-contact surfaces must be properly sanitized after washing and rinsing. Discussed the importance of proper sanitizer levels and proper monitoring of sanitizer levels. PIC relocated all food-contact surfaces to warewashing area to be washed, rinsed, and sanitized at the time of inspection. Corrective Action: Corrected at time of inspection. 4-601.11(A) - Priority Foundation: Equipment, Food-Contact Surfaces, Nonfood-Contact Surfaces, and Utensils. Inspector's notes
Mechanical slicer observed with food debris between blades found on clean storage shelf. The hard plastic part of the slicer was chipped, leaving an uneven surface that may not be easy to clean. Slicer was placed inside the wash basin at the 3 compartment sink. PIC stated that the slicer will be cleaned. Please ensure that food contact equipment is properly cleaned and sanitized before being placed in clean storage for future use. Food contact equipment shall be clean to both sight and touch. The slicer must also be in good condition with not chips/broken plastic to promote proper cleaning and reduce potential cross contamination. Corrective Action: Corrected at time of inspection.

Small leak observed at the 3 compartment sink faucet, also observed a puddle of water underneath the ice tea and coffee machine, PIC was not able to tell whether the unit was leaking but they stated that a work order will be submitted to ensure the unit isn't leaking.

Chlorine test strips were available and easily accessible. There were dishes being washed at time of inspection. Person in charge changed the sanitizer bottle feeding the dishwasher and primed the dishwasher. There was still 0ppm of chlorine after final rinse. PIC stated that they will submit a work order for the dish machine and utilize the quat sanitizer at the 3 compartment sink. Chlorine sanitizer must be maintained between 50-100ppm to ensure proper sanitization. Quat dispenser at 3 compartment sink was dispensing proper concentration between 200-400ppm and test strips were available. Correct By: Corrected At Time Of Inspection
