Inspector's notes
Observed milk case with an ambient air temperature of 46°F according to the min-max thermometer that was left in the cooler to stabilize for 15 minutes. The air temperature on the refrigerated unit was indicating a holding temperature of 36°F. The internal temperature of milk cartons in the milk cooler as measured using a probe thermometer ranged from 47°F-49°F. According to the person in charge, the milk cartons had been holding in the milk cooler from the night before. The milk cartons were embargoed at time of inspection (see embargo form). Discussed with person in charge to reach out to a technician to service the milk cooler and to use time-as-control for the milk in that unit moving forward until the milk case is repaired. Discussed with person in charge to utilize a secondary thermometer inside of the milk case itself as additional verification for cold holding temperatures in the milk cases. The establishment has sufficient cold holding capacity to maintain normal operations. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.
