Upon re-inspection, all violations have been corrected.The person in charge (PIC) has placed a work order for the dishwasher, added an "out of service" sticker on the dishwasher, and instructed employees to only use 3-compartment sink until repairs are completed. The establishment had 3-compartment sink set up and the quat sanitizer tested within the proper range of 150ppm-400ppm. PRIORITY VIOLATION-4-501.111, P: Manual Warewashing Equipment, Hot Water Sanitization Temperatures. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4574/AMC-Toolbox---Food-Contact-Surfaces. -- Observed the final rinse of hot water sanitation levels measuring between 110°F-127°F using min/max thermometer. The dishwasher was run multiple times and it continuously measured under the required specifications of 160°F. Requested the person in charge set up 3-compartment sink at the time of inspection. A re-inspection will be conducted on September 21st, 2023 to verify dishwasher can achieve hot water sanitizing temperature of 160°F. Please ensure employees are utilizing dish thermometer to verify dishes are getting properly cleaned. Correct By: Correct Prior To Reinspection
