Observed hot holding unit labeled "Legendary" in the kitchen with cooked chicken nugget sandwiches (internal temp 109* F) and cooked beef rib sandwiches (internal temp 129*F). Person in Charge (PIC) stated that they were cooked at 10:00 am today and placed in the hot holding unit. Internal temps were taken at 10:55 am. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 135°F or above. All TCS foods improperly hot held were reheated to 165°F at time of inspection. Corrective Action: Corrected at time of inspection.

Observed that the hot water sanitizing dishwasher had a maximum temperature of 145.5F, measured with a calibrated min/max thermometer. Ware washing machines using hot water for sanitizing must obtain a minimum temperature of 160F to properly sanitize. Use the 3 compartment sink to sanitize wares until the unit is repaired.
