Inspector's notes

In the walk-in cooler/56F with one of two inoperable evaporators, observed all TCS food holding over 41F. Foods included egg/chicken/meat sandwiches, chicken, creamer, and various milks holding 54-61F. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. All TCS foods improperly cold held more than 4 hours were discarded by PIC at time of inspection. Staff to use opposite end of the walk-in cooler measuring at 36F or other available refrigeration until equipment closest to the cooler door is repaired. Corrective Action: Corrected at time of inspection.
