Inspector's notes

In glass front refrigerator, soft cheese and containers of milk with internal temperatures of 52*F-56*F. Per manager, unknown time of when milk and cheese was in refrigerator. Soft cheese and milk was discarded. See embargo form. Ambient air temperature of glass front refrigerator was 56*F, taken with inspector thermometer and establishment ambient air thermometer. Discontinue use of refrigerator for storing of TCS foods until able to maintain proper temperature throughout the day. Maintain TCS (time/ temperature control for food safety) foods at a cold holding temperature of 41*F or less at all times. Corrective Action: Corrected at time of inspection.
