Inspector's notes

Observed excess flour and dried food debris inside the basins of both designated hand sinks at time of inspection. Discussed the importance of using the hand sinks solely for the purpose of handwashing with PIC. Handwash sinks must be supplied with hot water of at least 100°F, soap and an approved hand drying provision at all times. Facilities must be maintained in a condition that promotes handwashing. PIC will ensure establishment discontinues use of handwash sink for all activities that are not for handwashing. Corrective Action: Corrected at time of inspection.

Establishment did not have a probe thermometer on site or accessible at time of inspection. PIC stated that the Infrared thermometer was the only temperature measuring device available. Explained that infrared thermometers are only good for measuring surface temperatures. A probe thermometer is required for measuring internal temperatures of TCS foods. Probe thermometer provides a means for assessing active managerial control of TCS food temperatures. Corrective Action: Correct prior to re-inspection within 10 business days.
