Inspector's notes

Observed salsa, guacamole (with cut tomato), cheese, hot dogs, macaroni salad, creama, bacon, and pico de gallo with internal temperatures between 45 degrees F and 48 degrees F cold holding in reach-in cooler unit in front of the meat counter. Ambient temperature of the unit was found to be 45.1 degrees F using a min/max thermometer. Spoke with PIC and items were just stocked into the unit approximately 2 hours prior. Items were moved to walk-in cooler to rapidly cool down to 41 degrees F or below. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Corrective Action: Corrected at time of inspection.

Observed multiple hand wash sinks in the establishment with deficiencies. The hand sink at the outdoor cooking area did not have hand soap or hand towels. The hand sink at the 3-compartment sink was blocked with a sanitizer bucket in the basin and did not have any hand soap. The hand sink near the bandsaw did not have hand towels accessible (battery powered dispenser out of repair). The establishment shall maintain all hand sinks in good repair and accessible to promote proper hand washing practices.
