Inspector's notes
Observed ware washing machine after being run several times is providing a maximum temperature of 153*F and operator's temperature stickers not changing color to signify sanitizing temperature has been achieved. Person in charge will put in a work order for repair and until then ensure all items are properly washed rinsed and sanitized in three compartment sink (with correct concentration of quat sanitizer at time of inspection).

Predefined Comment: When food-contact surfaces are being sanitized with hot water in a dish machine, the surface temperature must reach at least 160°F as measured by an irreversible registering temperature measuring device to destroy pathogens that may remain on such surfaces after cleaning. Corrective Action: Corrected at time of inspection.

Observed bin lid to sugar and flour items (partially covered) in bakery to be in disrepair, with parts cracked missing revealing gaps and uneven edges with further cracking. Person in charge removed lid and will order a replacement, plastic wrap was used temporarily to cover bin. Corrective Action: Correct prior to next routine inspection.
