At time of inspection, observed two rice scoops in water at 130 degrees F. In-use utensils must be stored in a clean, dry location; in running water; or in hot water above 135°F. If utensils are stored in food, the handles must be stored above the surface of the food. PIC heated water to 135 degrees F. All in-use utensils were properly stored at time of inspection. Observed cooked noodles in a covered container in the walk-in refrigerator holding 53F. Cook said the container was taken out to prepare one dish. Discussed monitoring temperatures to ensure the food items do not go above 41F and ensuring they are not kept out of temperature control. The lid of the container was removed and the product was placed in the walk in to cool down to 41F. Corrective Action: Corrected at time of inspection.
