Observed chili and cheese sauce with internal temperatures of 112-115*F when measured with a probe thermometer. Chili and cheese had been in hot holding steamer for less than 2 hours and was reheated to 165*F at time of inspection. Steamer had been accidentally set to low and was turned up. All hot held TCS foods must maintain internal temperatures of 135*F and above. Corrective Action: Corrected at time of inspection.

Observed cut tomatoes and lettuce in the reach-in cooler across from the grill with internal temperatures ranging from 46-53*F when measured with a probe thermometer. According to manager, items had been in cooler for 3 hours or less. Items were moved to the walk-in to cool. All cold held TCS foods must maintain internal temperatures of 41*F and below. Observed mop sink faucet with an AVB (atmospheric vacuum breaker) connected to a chemical dispenser with the water turned on continuously. A chemical dispenser cannot be connected to an AVB to prevent the AVB from breaking down and failing. Faucet was turned off and connection was removed. Corrective Action: Corrected at time of inspection.

Please check sanitizer levels regularly to ensure levels are maintained at tall times.

Operator was instructed to discontinue operations until further notice. Operator had 'Masterline Facilities' on site at time of inspection and provided grease trap cleaning services conducted on February 9, 2024, last date of service. Please contact health department when repairs are completed, and all violations have been remedied. Red Closed sign was posted on front door.
