Inspector's notes
Observed inside of large chest freezer lid with no top insulation or plastic cover lining on the inside. Food items in the chest freezer are frozen. Explained to person in charge that a chest freezer missing insulation may affect its full capacity. Also, all food-contact surfaces must be smooth, non-absorbent, and easily cleanable. All equipment must be maintained in good repair at all times. Repair all equipment to a state of good repair prior to next routine inspection. Please replace lid or add plastic cover to facilitate cleaning and freezer capacities. Corrective Action: Correct prior to next routine inspection.

Upon request the items were rewashed, rinsed, and sanitized when a chlorine concentration of 50ppm to 100ppm had been established in the sanitizer basin. PRIORITY VIOLATION-3-501.14, P: Cooling. For a permanent fix to this violation, check out these simple tools in our Active Managerial Control Toolbox, made especially for you. https://www.maricopa.gov/4617/AMC-Toolbox---Cooling.--During inspection observed 5 stainless steel containers holding cooked chile rojo w/ shredded chicken at a temperature ranging from 100*F-103*F, placed on a utility cart in the middle of the kitchen. Per the employee the items were cooked at 11:00am, and had been in the cooling process for approximately 2 and a half hours. At 2:30pm, informed the employee to reheat the items to 165*F or higher. The employee placed all the food in the 5 stainless steel containers in two pots and reheated the items to an internal temperature of 170*F. The reheating process was verified by re-probing the items an hour after the reheating process began. Informed the cook & person in charge to follow proper cooling methods at all times. Please ensure TCS food is cooled from 135*F to 70*F in two hours and from 70*F to 41*F in an additional 4 hours. Correct By: Corrected At Time Of Inspection

PIC was unsure why it was on the floor but placed it on the shelf. Discussed that all food should be placed 6 inches above the ground to avoid the possibility of contamination in the event of a spill, flooding, or sewage issue and pests.
