Observed an employee hand drying dishes with a clean cloth, after the dishes were run through the dishwasher. EHS stopped the employee and re-educated on air drying requirements. Dishes were rerun through the dishwasher. All dishes are to air dry to protect them against potential contamination. Corrective Action: Corrected at time of inspection.
