Discussed with person in charge this attachment must be maintained and repaired such that it is smooth and easily cleanable to prevent beer or other material from collecting in cracks and crevasses. Observed ROP raw shrimp with butter/herbs, ROP raw salmon, and ROP raw steaks. Items that were ROPed less than 48 hours were opened and saved. Items that were ROPed more than 48 hours were embargoed. A re-inspection will occur within 10 days to verify that either a ROP variance was applied for or that the ROP equipment has been removed and a written statement is given stating that the establishment will cease all ROP procedures. A variance/HACCP must be obtained prior to conducting any specialized processes. Observed tuna and mahi mahi fish thawed in ROP packaging with the "Keep Frozen" label. PIC directed kitchen line associates to open and remove all fish from ROP packaging. All ROP fish labeled "Keep Frozen" must be removed completely from reduced oxygen packaging (ROP) prior to thawing under refrigeration or immediately after thawing under cold running water. All ROP fish was removed from ROP packaging at time of inspection. Corrective Action: Corrected at time of inspection.

TCS food/beverages such as mozzarella cheese and various juices measured with internal temperatures ranging between 47-51 degrees F. Items were recommended for discard- see embargo list. Refrigerator was repaired before inspection completed. Observed prep refrigerator on cook line (closest to beverage walk-in) measuring with an ambient temperature of 47 degrees F. TCS foods such as various sauces and cooked meats measured with internal temperatures ranging between 47-52 degrees F. Items were recommended for discard- see embargo list. Refrigeration repair began during inspection. Alternative refrigeration available to operate safely. Discussed cold holding and conducting routine temperature checks.
