observed cooked diced sausage pans placed atop the reach-in cooler. temperature indicating 62 deg f . discussed with manager. suggested to keep tcs food in the walk-in cooler or in a ice bath. please ensure rte/tcs food is kept at 41 deg f. manager removed sausage pan.
