observed in the food prep. upright cooler, some bags of tcs food such as sliced deli meats, ham, tukey, chicken and cooked ground taco meats. all bags dated at 12-17, and 12-30. per manager facility staff are supposed to redate the tcs bags once food bags are thawed. mcesd use by date policy reviewed. manager obtained proper use by date electronic stickers indicating prep. and discount during the inspection. mcesd use by date stickers , guidance document reviewed. Corrective Action: Corrected at time of inspection.
