Inspector's notes
Two pans of mozzarella cheese items-51-76F, macaroni and cheese-50F, and a cream sauce item-47F in ice baths in the cookline area. PIC stated that the cream sauce was recently placed into the ice bath and relocated to the walk in cooler. Three pans of stuffed pasta items-51-55F in a cooler drawer unit in the cookline area. PIC stated that the pasta was placed into the unit three and a half hours prior and relocated to the walk in freezer to rapidly cool. Prepped to go salads-46-50F in the reach in cooler in the server pass thru area. PIC discarded the mozzarella cheese, macaroni and cheese, and salad items due to being in the units/ ice baths for an extended amount of time-see embargo form. Keep TCS foods in cold holding at 41F or below. *Ambient temp of the salad unit was 53F. PIC stated that the unit would be scheduled for maintenance/repair. Establishment has sufficient refrigeration. Corrective Action: Corrected at time of inspection.

HACCP log for 2/10/26 was not accurately completed. Cooling time and temperatures for zuppa toscana was not recorded. PIC stated that cooling logs will be accurately completed in the future.
