Inspector's notes

Observed TCS food being held in a line prep-unit with an internal temperature of 49-51*F. Internal temperature registered with an internal probe thermometer. Ambient temperature of unit registered 50*F with a min/max thermometer. Per PIC all food items have been in unit for greater than 24hrs at time of inspection. TCS food items included hard boiled eggs, cheeses, cut tomatoes, and chicken salad. All TCS foods improperly cold held were discarded by PIC at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Instructed PIC to refrain from placing TCS food inside unit until repaired to hold temperatures of 41*F or less. Corrected at time of inspection.

Observed a live small beetle like insect inside the soda gun nozzle attached to the bar. Observed small beetle like insects inside all the floor drains along the bar area. Instructed PIC to remove all soda dispensers and relocate to ware washing area to wash, rinse, and sanitize food contact surfaces. Establishment must be maintained free of pests and all pest control measures must be conducted by a licensed pest control specialist. Must eliminate current pest control problem and obtain pest control from a certified and licensed pest control specialist by re-inspection. Correct prior to re-inspection on 8/8/25.

#22 — Proper Cold Holding TemperaturesPriority3-501.16

Inspector's notes

Observed a prep cooler holding TCS food items with a warm ambient temperature. Prep cooler top and bottom were separated via a metal partition with separate air vents. Ambient temperature of top unit measured with min/max ambient thermometer registered 50*F. TCS food in unit included cut tomatoes, shredded cheeses, cut lettuce, sliced deli meat, cooked meats, cooked mushrooms and onions. Per PIC the only food in unit greater than 2hrs was the shredded cheese which was kept in unit overnight. Shredded cheese improperly cold held were discarded by PIC at time of inspection. All other TCS foods improperly cold held were relocated to alternative functioning refrigeration unit to rapidly cool to 41°F at time of inspection. Except during preparation, cooking, cooling or when time is used as a control all TCS foods must be maintained at 41°F or below. Eggs not treated to destroy Salmonellae can be stored in equipment that maintains an ambient air temperature of 45°F or below. Unit cannot be used to store TCS foods until fixed to maintain temperatures of 41*F or below. Corrected at time of inspection.

Spoke to the assistant general manager of the property in regards to the re-opening of the establishment. The remodel should be completed in early 2024 and the establishment does not plan to open until after the beginning of the new year. The kitchen is gutted and is under a remodel with plan review. Inspector will follow up in October to see if remodel is still on track for opening in early 2024.No County legal action will result from this inspection.
