Observed unlabeled spray bottle filled with a clear liquid. PIC was unsure what the contents was, so it was disposed of down the sink. Informed PIC that all chemicals taken from bulk containers and put into new containers must be labeled with the contents common name. Corrective Action: Corrected at time of inspection.

Observed packages mac and cheese and raw chicken thawing in the three-compartments of the three-comp sink in still water. The internal temperature of the food products was 48*F-54*F. PIC stated that the products had been thawing for about an hour. Informed PIC that all foods being thawed need to be thawed under cold running water. PIC put thawed products away in the walk-in at time of inspection. All foods being thawed from frozen must be thawed in an approved manner. Foods must be thawed under refrigeration, under cold running water, or as part of the cooking process. Corrective Action: Corrected at time of inspection.

Observed the hot holding drawers having smoke house chicken with internal temperatures of 125*F and had been in the unit for around 30 minutes. Person in charge states TCS food items held in that unit are held at most for 2 hours. Food safety is monitored with a timer but no timer was placed at the time of inspection. Person in charge voluntarily disposed of the chicken at the time of inspection. Time as a Public Health Control requires written procedures detailing process for Time as a Public Health Control and time-stamping for items actively held under Time as a Public Health Control. Corrective Action: Corrected at time of inspection.
