-- Dishes in low temp chlorine dishwasher tested under 50ppm. The chlorine sanitizer container connected to dishwasher was observed to be empty. The person in charge (PIC) replaced the empty container, primed the sanitizer, and reran the dishwasher. After replacing the container and priming the dishwasher, the concentration measured between 50ppm-100ppm. Ensure employees are utilizing test strips and frequently checking containers to ensure dishes are properly cleaned and sanitized. Corrective Action: Corrected at time of inspection.

Upon re-inspection, all violations have been corrected.The establishment will use the compartment sinks to wash, rinse, and sanitize dishes until dishwasher repairs are completed. The person in charge stated a work order has been placed and they are awaiting for technician to come out. A "do not use" sign has been placed on the dishwasher in the meantime. The establishment has adequate capacity to continue operating until repairs are completed. The inspector assisted employee with priming and rerunning the dishwasher multiple times and the sanitizer consistently tested under 50ppm. At the time of inspection, the employee stated they will use the dishwasher to wash and rinse dishes and set up the 2-compartment sink with chlorine for sanitizing the dishes. A re-inspection will be conducted on or before April 8th, 2024 to verify dishwasher has been repaired.
